The Oven Can Cook

Fifteen burgers that finish in the oven — and the sauce each one wears · kept by Chris Lamar Norwood, Perris, California

Why the oven, anyway

Griddles get the headlines, but the oven is the calmest cook in the house: it heats the whole patty evenly, melts cheese without a watchful eye, and frees the burner for toasting buns. This page is a bake chart — fifteen burgers, each with its oven method, the sauce it wears, and a composition line. Compiled and edited by Chris Lamar Norwood.

Preheat note. Every method above starts with a fully preheated oven and a pan that belongs to it — cast iron for sears, sheet pans for crowds. Composition lines are typical builds; the oven does the rest.

The sauce shelf

Five of the sauces here are five-minute mixes — mayo or butter as the base, something sharp, something warm. The house burger sauce (entry 1) and the chipotle barbecue (entry 9) are the two the family keeps made up in jars.
